Freddie’s “(Hopefully) Perfected Over the Years” One-Pot Chicken & Chorizo Stew (Frederika, UK)

My love of chorizo and butter-bean-based university budget


  • 4 skinless, boneless chicken breasts (diced)
  • 200g chorizo (thinly sliced)
  • 400g tinned tomatoes
  • 400g butter beans (drained)
  • 1 red pepper (diced)
  • 1/2 onion (finely diced)
  • 2 teaspoons garlic granules
  • 2 teaspoons sweet paprika
  • 1 teaspoon onion salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons soured cream


  1. Pre-heat oven to 160 degrees C
  2. Add all of the above into an oven-proof dish with a lid (to retain moisture)
  3. Cook for 2 hours (or until peppers are soft and meat is breaking apart)
  4. Serve in a bowl with crusty bread

Serves 4-6 (depending on how much your loved ones enjoy it)
