Mushroom Cream Pasta (Quang, Tampa)


  • Shallots
  • A few teaspoons of wine
  • Salt and pepper
  • Herbs: oregano, basil
  • 2-3 cloves of garlic 
  • Chopped mushrooms, the darker, the better, portobello, cremini
  • Stock
  • Heavy cream 
  • Butter
  • Olive oil


  1. Render shallots with salt and pepper and herbs (not burned)
  2. Chop your mushrooms and salt to remove the juice
  3. Add mushrooms to shallot mixture and cook down
  4. Add the garlic late, and add some oil
  5. Boil and cook pasta 6/8th done 
  6. Add pasta to shallots and mushrooms and add a little bit of vegetable stock 
  7. Add heavy cream
  8. Mix well
  9. Add a pat of butter and serve with parmesan
