INGREDIENTS
- Shallots
- A few teaspoons of wine
- Salt and pepper
- Herbs: oregano, basil
- 2-3 cloves of garlic
- Chopped mushrooms, the darker, the better, portobello, cremini
- Stock
- Heavy cream
- Butter
- Olive oil
STEPS
- Render shallots with salt and pepper and herbs (not burned)
- Chop your mushrooms and salt to remove the juice
- Add mushrooms to shallot mixture and cook down
- Add the garlic late, and add some oil
- Boil and cook pasta 6/8th done
- Add pasta to shallots and mushrooms and add a little bit of vegetable stock
- Add heavy cream
- Mix well
- Add a pat of butter and serve with parmesan
