Light Shrimp Cocktail (David, Paris)

Like many, in the summer I try to eat light and healthy, so I always try to find delicious alternatives to caloric classics. This is a lighter version of a shrimp cocktail avoiding useless mayonnaise 🙂

Ingredients (for 2 portions)

  • 10 cooked shrimps
  • 1 chopped avocado
  • Half an onion, chopped
  • Chopped fresh parsley
  • 1 chopped tomato
  • Lemon juice
  • Olive oil
  • Salt
  • Pepper

For light “Rouille” (spicy garlic “mayonnaise”)

  • 100g of Greek yoghurt 
  • 1 chopped garlic clove
  • Olive oil
  • Piment d’Espelette
  • Lemon juice
  • Salt

Preparation of Salad

  1. Peel shrimps and keep them on the side.
  2. Mix all ingredients of salad and season with lemon, olive oil, salt, and pepper.

Preparation of “Rouille”

  • Mix all ingredients and season to your convenience.

Assemblage

  • Place salad in a cup. Place shrimps on the edges of cups. Add a spoon of the “Rouille” in the center.
