Like many, in the summer I try to eat light and healthy, so I always try to find delicious alternatives to caloric classics. This is a lighter version of a shrimp cocktail avoiding useless mayonnaise 🙂

Ingredients (for 2 portions)
- 10 cooked shrimps
- 1 chopped avocado
- Half an onion, chopped
- Chopped fresh parsley
- 1 chopped tomato
- Lemon juice
- Olive oil
- Salt
- Pepper
For light “Rouille” (spicy garlic “mayonnaise”)
- 100g of Greek yoghurt
- 1 chopped garlic clove
- Olive oil
- Piment d’Espelette
- Lemon juice
- Salt
Preparation of Salad
- Peel shrimps and keep them on the side.
- Mix all ingredients of salad and season with lemon, olive oil, salt, and pepper.
Preparation of “Rouille”
- Mix all ingredients and season to your convenience.
Assemblage
- Place salad in a cup. Place shrimps on the edges of cups. Add a spoon of the “Rouille” in the center.
