Summer Strawberry Gazpacho (Mia, NYC)

Fresh, surprising and refreshing. Perfect for the warmer days to cool down with a fruity gazpacho.

Feel free to adjust ingredients and measurements to personal taste.


  • 1 pound of strawberries
  • 2 tomatoes
  • 1 small cucumber
  • ¼ of apple juice
  • Salt and pepper
  • Olive oil
  • 1 garlic clove
  • ¼ of a white sweet onion


  1. Wash the tomatoes, cucumber and strawberries.
  2. Remove the strawberry leaves and slice your tomatoes, cucumber, onion and garlic.
  3. Put it all in a blender.
  4. Drizzle in olive oil, pour in the apple juice, and add salt and pepper.
  5. Blend and serve chilled.
