
INGREDIENTS
- 1 packet of soba noodles
- 2-3 tbsp light soy sauce (adjust to taste)
- 1 tbsp dark soy sauce
- 2 tbsp chinkiang vinegar or rice wine vinegar
- 3 chopped garlic
- 2-3 chopped fresh chilli
- 4-5 tbsp of chilli oil with its sediment
- 2 tsp sesame oil
- 1/2-1 tsp black pepper
- finally hopped green part of 4 spring onions
- Optional toppings: sesame seeds, grated carrots & peanuts
STEPS
- Boil the noodles as per the packet instructions
- Take a large bown and mix up all the remaining ingredients
- One the noodles are cooked strain them in a colander and rinse them with cold water (this step is important and prevents it from becoming mushy and sticy)
- Toss the noodles in the sauce till well coated. Taste and adjust the seasoning. Serve in a dish and top with optional ingredients if you like.
If serving it cold, cool the noodles completely before a it to the sauce. Add 1-2 tsp of oil during this step to prevent it from sticking
