Soba Noodles in Chilli Dressing (Ronak, Mumbai)


  • 1 packet of soba noodles
  • 2-3 tbsp light soy sauce (adjust to taste)
  • 1 tbsp dark soy sauce
  • 2 tbsp chinkiang vinegar or rice wine vinegar
  • 3 chopped garlic
  • 2-3 chopped fresh chilli
  • 4-5 tbsp of chilli oil with its sediment
  • 2 tsp sesame oil
  • 1/2-1 tsp black pepper
  • finally hopped green part of 4 spring onions
  • Optional toppings: sesame seeds, grated carrots & peanuts


  1. Boil the noodles as per the packet instructions
  2. Take a large bown and mix up all the remaining ingredients
  3. One the noodles are cooked strain them in a colander and rinse them with cold water (this step is important and prevents it from becoming mushy and sticy)
  4. Toss the noodles in the sauce till well coated. Taste and adjust the seasoning. Serve in a dish and top with optional ingredients if you like.

If serving it cold, cool the noodles completely before a it to the sauce. Add 1-2 tsp of oil during this step to prevent it from sticking
